What You’ll Need (The Magic Is In The Simplicity)
- Pasta: (Fusilli, Penne, or Spaghetti) – About 1 serving. Use your favorite shape! Buy Here
- Water & Salt: Enough to boil, and a splash of oil to prevent sticking.
- Groundnut Oil: 2-3 Tbsp, essential for infusing the chili and garlic. (any oil works but I like it with groundnut oil Buy Here)
- Red Chili Powder: 1/2 tsp (Adjust to your spice preference!)
- Red Chili Flakes: 1/4 tsp, adds a lovely textural heat.
- Garlic: 2 cloves, minced (or 1/2 tsp Garlic Powder). Can’t have spicy pasta without it! Buy Here
- Dried Oregano: A generous handful. This is the secret star—don’t be shy! Buy Here
- Grated Cheese: (Parmesan or Cheddar) – As much as your heart desires, for that creamy, salty finish.
- Fresh Coriander/Parsley: A few sprigs (Optional, but adds a pop of color!)
The 3-Step Recipe: Dinner is Served!
Step 1: Get Boiling
- Bring a pot of water to a rolling boil. Add a generous pinch of salt and a small drizzle of oil.
- Add your pasta and cook according to package directions until al dente (usually 8-10 minutes).
- Pro Tip: Before draining, reserve about 1/2 cup of the starchy pasta water!
Step 2: Build the Flavor Base
- While the pasta boils, heat the olive oil in a large, wide skillet over medium heat.
- Once hot, stir in the Red Chili Powder, Red Chili Flakes, and Garlic/Garlic Powder. Sauté for about 30 seconds until the oil is fragrant (be careful not to burn the garlic!).
Step 3: Toss, Season, & Serve
- Drain the pasta and immediately add it to the skillet with the flavored oil. Toss well to coat every spiral.
- If it looks a little dry, add a splash of the reserved pasta water to create a light, emulsified sauce.
- Remove from heat. Now for the fun part: add a “shitload” of dried oregano (your words, and we agree!) and mix it in.
- Top with a heaping mound of cheese. Garnish with fresh coriander if using.
Enjoy this incredibly easy, flavor-packed dish!
For healthier options, you can switch regular pasta with lentil pasta or wheat pasta – it feels the same.
