Everyone has that one dish.
The one that can rescue a bad day, make a normal day better, and instantly make you forgive the universe for all the nonsense it throws at you.
For me, that dish is gatta curry.
If you’ve never had it before, gatta curry is a traditional Rajasthani dish made with gram flour dumplings cooked in a spicy yogurt-based gravy. It’s simple, comforting, slightly dramatic (like all good Indian curries), and when eaten with hot roti or rice, it’s honestly perfect.
And the best part? It doesn’t even require fancy vegetables or ingredients. Rajasthan historically had limited access to fresh vegetables because of its desert climate, so dishes like gatta curry were born out of pure culinary creativity.
Basically: no vegetables, no problem.
Let’s make it.
Ingredients
For the Gatta (Gram Flour Dumplings)
- 1 cup besan (gram flour)
- 2 tbsp curd (dahi)
- 1 tbsp oil
- ½ tsp turmeric powder
- ½ tsp red chilli powder
- ½ tsp ajwain (carom seeds)
- Salt to taste
- Water as needed
For the Curry
- 1 cup curd (well whisked)
- 2 tbsp besan
- 1 tbsp oil or ghee
- ½ tsp mustard seeds
- ½ tsp cumin seeds
- 1 pinch hing (asafoetida)
- ½ tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp coriander powder
- Salt to taste
- 2 cups water
Step 1: Make the Gatta Dough
In a bowl, mix besan, curd, oil, turmeric, chilli powder, ajwain, and salt.
Add a little water and knead everything into a firm dough.
Roll the dough into long cylindrical logs, similar to thick breadsticks.
Step 2: Cook the Gatta
Bring a pot of water to a boil.
Drop the dough logs into the boiling water and cook for about 8–10 minutes.
Remove them and let them cool slightly, then slice them into small round pieces.
These pieces are your gatta.
Step 3: Prepare the Curry Base
In a bowl, mix together:
- Whisked curd
- Besan
Whisk well until there are no lumps.
Step 4: Temper the Spices
Heat oil or ghee in a pan.
Add mustard seeds, cumin seeds, and hing.
Once they start spluttering, add turmeric, red chilli powder, and coriander powder.
Cook for a few seconds until the spices release their aroma.
Step 5: Build the Curry
Slowly add the curd-besan mixture into the pan while stirring continuously.
Add water and salt, then cook on medium heat.
Keep stirring so the yogurt doesn’t split.
Once the gravy begins to simmer and thicken, add the gatta pieces.
Let everything cook together for about 10 minutes so the dumplings absorb the flavors.
Step 6: Serve
Your gatta curry is ready.
Serve it hot with:
- Roti
- Jeera rice
- Plain steamed rice
Or honestly just eat it directly from the bowl with a spoon. I am not here to judge your life choices.

Gatta curry is one of those dishes that proves you don’t need a million ingredients to create something amazing.
Just besan, yogurt, spices, and a little patience — and suddenly you have a bowl of something warm, comforting, and ridiculously flavorful.
